INTRODUCTION
Kirimen is a Japanese ramen restaurant located in Ho Chi Minh City’s Le Thanh Tonarea, marking the brand’s first overseas expansion.
Operated by Double Co., Ltd., an experienced restaurant operator with more than 40 restaurants, Kirimen has a distinctive philosophy: the noodles are the star, while the soup plays a supporting role.
This approach highlights the natural wheat aroma, texture, and bite of its handmade noodles. It is best expressed through Kirimen’s signature dish, Kiridama—a minimalist combination of noodles, egg, and sauce that allows diners to experience the true character of the noodles.
“AT KIRIMEN, THE NOODLES ARE THE STAR.
EVERY DETAIL REFLECTS OUR COMMITMENT TO QUALITY,
SUPPORTED BY HOSHIZAKI, OUR TRUSTED PARTNER SINCE OUR FIRST STORE IN VIETNAM.”

Unlike conventional ramen, Kirimen places the noodles at the center of the experience, with the soup and seasonings playing a supporting role. From their natural wheat aroma to their texture and bite, the handmade noodles are carefully prepared to express their distinctive character. Some dishes feature almost no soup, allowing diners to appreciate the quality of the noodles more directly.
Equally important is Kaeshi—the silent soul of the bowl. Made from soy sauce, mirin, salt, and dashi ingredients, Kaeshi gives the ramen its depth, balance, and identity. Kirimen prepares its Kaeshi using soy sauce from Adachi Jozo, a brewery with more than 130 years of history, where it is naturally fermented in traditional kioke wooden barrels. Its rich kokumi harmonizes with the handmade noodles to create a delicate yet memorable flavor.
Maintaining this level of quality requires consistency in preparation, cooking time, and seasoning. To support its daily operations and future growth, Kirimen operates a central kitchen in the same building as its flagship restaurant, allowing key processes to be standardized. Since the opening of its first store in Vietnam, Kirimenhas trusted Hoshizaki equipment to help maintain product quality, food safety, and operational efficiency. The reliability of the equipment, together with responsive and professional local support, has made Hoshizaki a valued partner in Kirimen’s operations.
Supported by Double Co., Ltd.’s experience in operating more than 40 restaurants, Kirimen’s Vietnam debut marks the beginning of a broader journey to introduce a new expression of Japanese ramen—shaped by craftsmanship and respect for every ingredient—to a wider audience.
