INTRODUCTION

Menya Hanabi, originally founded in Nagoya, Japan, is renowned as the birthplace of Taiwan Mazesoba—soupless mixed noodles that have gained international recognition for their bold flavors and unique dining experience. Each bowl features spicy minced pork, garlic chives, green onions, seaweed, fish powder, raw egg yolk, and thick noodles, carefully mixed before eating. To complete the meal, rice (Shime-Gohan) is added to the remaining sauce, offering a second way to enjoy the dish.

Bringing Menya Hanabi to Vietnam in 2025 was both a bold step and a natural evolution. For founder Mr. Miyama, Vietnam’s rapid growth and passion for vibrant, spicy cuisine made it the ideal market. “We believed the layered flavors of Taiwan Mazesoba would resonate strongly with Vietnamese diners,” he reflects.

Authenticity remains the brand’s core value. Under supervision from Nagoya headquarters, key ingredients are imported from Japan to ensure every bowl mirrors the original. Guests are guided to stir thoroughly, add a touch of homemade kelp vinegar, and finish with rice—transforming one dish into a multi-layered experience.

To achieve the same precision in operations, Menya Hanabi partnered with Hoshizaki Vietnam. Through close collaboration and trial production, custom kitchen equipment was developed locally—reducing costs while meeting Japanese standards of craftsmanship. Beyond installation, Hoshizaki’s responsive after-sales service provides the stability essential for daily operations.

Menya Hanabi is preparing for steady expansion across Ho Chi Minh City. With Hoshizaki as a trusted partner, the brand is well positioned to grow while preserving its hallmark authenticity.
