INTRODUCTION
Founded in 1925, Mikasa takes its name from Mount Mikasa in the founder’s hometown of Nara. In 1932, the restaurant introduced “Karaage” (Japanese-style fried chicken), which became a culinary staple in Ginza, popularized by the phrase: “If you visit Ginza, you must try Mikasa’s Karaage”. Recognized by the Japan Karaage Association as the first establishment in Japan to serve Karaage, Mikasa also played a key role in shaping the country’s Yoshoku cuisine, with iconic dishes such as Chicken Curry, Chicken Doria, and Beef Stew.

To celebrate its 100th anniversary, Mikasa launched its first international location in Vietnam—bringing nearly a century of culinary heritage to a new audience. “I want people in Vietnam to enjoy the exact same flavors we’ve preserved for 100 years. Western style Japanese cuisine is still a new category here, which is exactly why we remain committed to authenticity—we even import many of our seasonings directly from Japan” explains of Mr. Kimura (General manager). This expansion marks a significant milestone for the brand, introducing its refined Yoshoku cuisine to the vibrant and rapidly growing food and beverage market of Ho Chi Minh City.
*Yoshoku is a Japanese style of Western-influenced cuisine that emerged in the late 19th century. It blends Western ingredients like butter, cream, and demi-glace with Japanese sensibilities—highlighting balance, presentation, and umami. The result is nostalgic yet refined comfort food that bridges two culinary cultures.
Mikasa’s menu offers a distinguished take on Yoshoku, featuring signature dishes such as:
- Karaage Fried Chicken – Introduced by Mikasa in 1932 and recognized by the Japan Karaage Association, this iconic dish features marinated chicken delicately coated and fried to a golden crisp.
- Japanese Chicken Curry – A hearty, mildly spiced curry with tender chicken, served over steamed rice. A beloved comfort dish adapted from European influences.
- Beef Stew – Slow-simmered beef and vegetables in a rich, soy-accented demi-glace sauce, showcasing the fusion of Western technique and Japanese flavor.
- Cheese Baked Rice (Doria) – Layers of rice, creamy béchamel, and cheese baked to perfection—delivering warmth, depth, and satisfaction.

From tailored consultations and flexible kitchen design solutions to hands-on support throughout the installation process, Hoshizaki Vietnam delivered both onsite and remote assistance” shared Mr. Kita (Director).
Hoshizaki also supported Mikasa through product trials and demonstrations at its showroom, allowing for confident, informed decision-making. With high-performance refrigeration, durable ice makers, and fully integrated kitchen solutions, Hoshizaki played a critical role in helping Mikasa launch operations smoothly and successfully.
