INTRODUCTION

RAMEN BUTA SHAMOJI is a renowned ramen brand with a long history dating back to 1984 in Japan. With over 40 years of experience, the restaurant has continuously evolved to uphold the essence of traditional Japanese cuisine while expanding into the Vietnamese market to deliver an authentic and refined dining experience.

“QUALITY AND RELIABILITY ARE ESSENTIAL TO OUR SUCCESS. HOSHIZAKI’S EQUIPMENT ENABLES US TO MAINTAIN JAPANESES STANDARDS IN VIETNAM WHILE THEIR EXCEPTIONAL AFTER-SALES SERVICE ENSURES SEAMLESS OPERATIONS ”

MR. KONDO (Director & Chef)

Launching in Vietnam in March 2025, RAMEN BUTA SHAMOJI aims to set a new benchmark for authentic Japanese ramen. The decision to expand into this market was driven by the growing demand for an authentic Japanese dining experience and the opportunity to introduce a unique ramen concept while preserving its traditional roots.

RAMEN BUTA SHAMOJI stands out with a meticulously curated menu featuring:

  • White Tonkotsu – A classic pork bone broth simmered for 12 hours to achieve a rich, creamy texture packed with umami.
  • Hot Spicy Tonkotsu – Infused with homemade chili oil and topped with a generous serving of meat miso blended with various spices, delivering a deep, bold, and spicy flavor
  • Tokyo Soy Sauce Ramen – A light, clear broth crafted from a blend of three premium Japanese soy sauces, combined with a rich stock made from chicken, pork, and kelp, served with freshly made thin noodles.

*Umami, meaning “pleasant savory taste” in Japanese, is the fifth basic taste alongside sweet, sour, salty, and bitter. Found in ingredients like miso, soy sauce, and slow-cooked broths, it adds depth, richness, and satisfaction to every bowl of ramen

A crucial aspect of ensuring smooth operations was selecting reliable kitchen equipment. “Having used Hoshizaki products in Japan, we have complete confidence in their performance and durability. Choosing Hoshizaki for our Vietnam location was a natural decision. Beyond product quality, their after-sales support has been invaluable—providing seamless coordination with other suppliers and timely on-site solutions,” Mr. Kondo explains.

With an unwavering commitment to authenticity and quality, RAMEN BUTA SHAMOJI is redefining the ramen experience in Vietnam, bringing premium Japanese cuisine to life with precision and craftsmanship that embody the essence of Japanese culinary tradition.
