Yamaya, a renowned producer of Karashi Mentaiko (spicy cod roe) in Japan, is not only celebrated for its exceptional products but also for its dedication to sharing Kyushu’s culinary heritage through its restaurant ventures. At its establishments, guests can savor regional specialties such as Motsunabe (tripe hot pot) and freshly prepared Tempura.
This article highlights the successful installation of Hoshizaki kitchen equipment at Hakata Tempura Yamaya, the first franchised location of Yamaya’s Hakata Tempura concept in Thailand.

Operated by JALUX ASIA Ltd., a local subsidiary of the JALUX Group, the Thailand franchise launched its first branch in Bang Na in August 2023, followed by a second in Rangsit that December. These restaurants have quickly gained popularity for their light, crispy Tempura served with Yamaya’s signature Umadashi dipping sauce. Complimentary refills of Mentaiko and Karashi Takana (spicy pickled mustard greens) have also become a customer favorite.
With strong satisfaction in both product performance and service quality, Yamaya plans to continue expanding its restaurant footprint in Thailand—partnering with Hoshizaki to ensure consistent excellence in every new location.his is a franchise restaurant of “Hakata Tempura Yamami”, which is owned by Yamaya, a famous Mentaiko producer. The operation in Thailand is managed by the local subsidiary of the JALUX Group, JALUX ASIA Ltd. In August 2023, the Bang Na branch was opened, followed by another in Rangsit in December. The restaurants feature freshly fried Tempura with a crispy texture, paired with rich Tempura dipping sauce made with Yamaya’s “Umadashi” (savory soup stock). The service of free refills of Mentaiko and Karashi Takana has gained popularity.
