INTRODUCTION

Tonkatsu Ito is a Japanese tonkatsu
restaurant in Ho Chi Minh City, developed
as a new dining concept by the company
behind two established Gontan restaurants.
Located at Takashimaya, the restaurant
introduces a modern approach to tonkatsu
built around a clear idea: delivering
authentic Japanese quality in a setting that
feels refined, comfortable, and
approachable.

Positioned as “not overly luxurious, but
slightly premium,” Tonkatsu Ito focuses on
the fundamentals of a satisfying tonkatsu
experience—from carefully prepared pork
and precise cooking to a light, crisp coating
designed to complement the meat’s natural
flavor.

Building on its experience with the GONTAN brand, the company introduced Tonkatsu Ito as a new dining concept for Vietnam. The restaurant fills the space between casual and high-end Japanese dining, offering authentic quality in a refined yet accessible setting.

At the heart of Tonkatsu Ito is a focus on the fundamentals of great tonkatsu. Careful preparation, precise cooking, and a light, crisp coating allow the natural flavor of the pork to stand out, creating an enjoyable experience from the first bite to the last.

Maintaining this quality consistently in Vietnam requires careful control of ingredients, oil management, cooking conditions, and kitchen workflows. Clear operational standards help ensure that every guest can expect the same quality each time they visit.

For kitchen equipment, the company once again selected Hoshizaki, building on its experience across previous GONTAN restaurants. The reliability of Hoshizaki equipment helped reduce uncertainty during the opening phase and support stable daily kitchen operations from day one.

Looking ahead, Tonkatsu Ito aims to become a restaurant guests can return to regularly—offering quality and satisfaction without the formality of luxury dining. With a distinctive “slightly premium” concept and a strong operational foundation, the Takashimaya location may also pave the way for future expansion in Vietnam.
